As current passes through the LED, it produces infrared light which is detected by the phototransistor inside the optical isolator. This creates a circuit and allows the voltage to pass to the MOSFET and through the load, hence turning the device on. Once the input voltage drops, the MOSFET turns off and the circuit breaks.
