This large avalanche of particles cancels out the electric field at the junction and the voltage drops suddenly, producing a voltage that is lower than the reverse breakdown voltage of the diode. The MMSZ5250C-HE3-18 is built such that this breakdown voltage is ensured to be in the prescribed range.
